Retro Dinner: Bacon Cheeseburger with Red Onion Relish




Actually, according to the book I used, this burger is not, in fact, for dinner.

No. This very filling burger is listed as a Man-size Snack.

Sure...because in the fifties and early sixties, our ancestors (read: my grandparents and their friends) were burning in the sun, toiling the fields.

Ri-ight...

Bacon Cheeseburger with Red Onion Relish

A basic burger (Morningstar Farms Grillers for Alex and me), topped with cheese, bacon, and a relish comprised of red onions, red chili, brown sugar, thyme, red wine vinegar and butter.

I wasn't nuts about topping mine with onions...despite how lovely and caramelized they were, had a few slices of avocado instead...

Pretty simple, and very classic. And filling enough that Matt only barely finished it!
