Grilled Panini with Smoked Provolone & Basil
Yet another cooking mag recipe; this one coming from the latest issue of
Vegetarian Times.
Nice, country-style rolls (ours were a surprise find at Ingles, of all places), split and spread with a mixture of mayonnaise and chopped basil. This is toppped with a white bean, shredded smoked Provolone, and red onion combo, wrapped in foil, placed on a heated grill-pan, and weighted down with bricks (in our case, a filled tea kettle), and cooked three or four minutes per side.
Really, really, good stuff. Just a hint of smokiness (might be the quality of the cheese we used), filling, and basically healthy. Can't beat that.

Where There's Smoke...
there's a pretty happy guy, knife & fork in hand. Sticking to my pledge to actually make more of the recipes from the half-dozen or so cooking magazines I get, Matt fired up the grill for this Wood-Smoked Tri-Tip with Sicillian Herb Sauce (Bon Appetit,...

Something For The Fall-out Shelter
One of Matt's Father's Day gifts was this very cool Decade Box from Hometown Favorites. Normally, I wouldn't give a large box of candy as a gift, but this was simply too good to pass up. Sure, there was an incredible breakfast of artery-clogging...

Potato-crusted Salmon With Herb Salad
Some weeks ago, I suggested (translation: do it now) that Matt & I work through the multitudinous recipes I've been adding to the computer's 'Bookmarks'. It took some time, of course, because there's just so many things I want to...

Ways To Make Me Happy
I completely support Matt in his job, and when he needs to take the odd business trip, I think it's great. I don't enjoy staying home and playing full-time parent for four days, but I survive. And when he sends me two dozen organic (purple!)...
