Bacon & Tomato Salad




Another Labor day dish; Bacon & Tomato Salad.

I pushed for this dish, despite Matt's initial reluctance. Everyone was glad I did.

This is one awesome salad. Easy turned into a main dish, chopped tomatoes, red onion and basil are tossed with olive oil and vinegar, given the S&P treatment, and left to rest for a bit.

Meanwhile, mayo, Dijon mustard, curry powder (as if...we used garam masala), a Cajun spice mix (again, you've got to be kidding...we used one of Emeril's recipes), lemon juice, garlic (paste), and hot sauce are mixed together.

Sprinkle cooked bacon pieces over the tomato salad, and serve alongside slices of bread with the spiced mayo (not pictured).

It's kind of like a BLT, in salad form, swapping out the lettuce for basil. And it's really, really good.

In addition to using home-made spice mixes rather than store bought, I also decided to use balsamic vinegar rather than the sherry vinegar called for. Everyone agreed this was a good choice, giving the salad a richer and deeper flavor.

Seriously, this stuff was really good. My father-in-law had at least three servings.

It doesn't keep well, though, so if you make it, adjust the recipe to your needs. It's too good to waste.
