Those Ragin' Cajun...
potatoes, that is!
As we get ready for
Fat Tuesday, I prepared a vaguely New Orleans-ish dinner Monday night.
Cajun Potatoes with Spicy Lemons and Onions, from this book; barely boiled potato wedges, roasted with red onions, garlic and lemon, tossed with a sauce of lemon juice, water, tomato puree, paprika, cayenne, oregano, thyme and cumin, then drizzled with olive oil. Cook till potatoes are tender, and all liquid is gone.
Wonderful potatoes! The heat sneaks up on you, but when it gets there? Man! Spicy.
And in an attempt to sit down to something resembling a meal, I also made these
Hot Muffuletta Sandwiches.
Crusty bread smeared on one side with an olive/garlic/parsley/olive oil mixture, then topped with salami, ham (prosciutto for Matt), and provolone, wrapped in foil, and baked till cheese melts. In case you're wondering, I used veggie deli slices for mine.
Really good sandwiches...but c'mon; it's toasted bread, and melted cheese.
I have to confess: I did little more than sprinkle the olive mixture on my sandwich; truth is, I hate olives. Can't stand them, no matter how often I try them.
Overall, really good food. And it's just getting us in the mood for Tuesday night's big Mardi Gras meal!
And don't forget: I'll be announcing March's Blog Party theme tomorrow!

My First...tagine
My in-laws gave me a lovely tagine, made in Morocco, for Christmas. Finally got around to using it this past weekend. And of course, the best place to start would be by making something from Paula Wolfert. From her newest book, The Food of Morocco, the...

Ham And Gruyère French Toast Sandwiches
How decadent does that sound? We love ham (ok, veggie ham for me, and prosciutto for Matt) and Gruyere, and we love French toast. Putting those two together? Brilliant! A recipe from Food & Wine (sorry, guys...), it's layers of your-choice-of-ham-product...

Pecan Chicken And Spicy Cornmeal Potato Wedges
Every once in a while, I'll troll some of my favorite foodie sites. My purpose? Find new recipes. A couple of weeks ago, I grabbed a bunch from Food & Wine and Epicurious, and we're making our way through them. Monday night, it was Pecan Crusted...

A Taste Of Chile
And for my next trick:
Garlic Soup and Empanadas!
I have to be honest. I'm having a blast working through all these new recipes.
Continuing in the Sundays at Moosewood...
This meal was postponed when I discovered it called for veggie stock,...

Moosewood Meals, Con't.
For lunch today, I made Cheddar and Parsnip Soup, with Grilled Sandwiches.
This is the part I hate most; chopping all those onions!
Add cubed parsnips and potatoes, ground fennel seeds (the recipe also called for caraway seeds, only then did I...
