Souper Sundays: Chipotle Chicken Tortilla Soup




Another Sunday, another soup. Another chance to join up with Deb & Souper Sundays.

This soup was all for Matt. I think the name explains all.

I used this recipe, with a few changes. First, for the broth, I roasted the chicken beforehand, giving it a deeper & richer flavor. No cilantro, as I didn't want the soup to taste like dishwater.

I had some lime-infused rice from another dish, so substituted that for the plain or brown rice. Matt won't eat sweet potatoes, so white instead.

Skipped frying tortilla strips, to save time, and just used chips. And naturally, our avocados were in bad shape...

But he loved it. A spicy, warming, filling soup. And it made the house smell amazing.
