Red Lentil Soup with Curry




Monday's dinner, a slightly sweet and spicy soup.

Onions, garlic, ginger, curry powder, cinnamon, cumin and bay leaves, cooked for a few minutes. To this, add stock (veggie bouillon for us) and red lentils. Bring to a boil, cover, and cook at a low boil till lentils are tender. Add some lemon juice, cilantro (which I intentionally omitted) and chutney. Add some yogurt or sour cream before serving.

It was a nice soup, but as Matt said, it really needs something to go with. Rice, bread...sumthin'.

Still, another not-too involved and fairly healthy dinner. So, no complaining. And that means Me.

But you think it would come out a bit more red, wouldn't you?
