Okoze:Restaurant

Last night it was too hot to cook and we really weren't that hungry so we went to a new sushi place right around the corner on Union at Hyde--Okoze. Very chic, contemporary Japanese interior in rich earth tones with lots of dark wood, some luxurious textile hangings and most importantly GREAT sushi. Some unusual things like the Golden Dinosaur, a tempura style "sandwich" made of fried shiso leaves with a layer of uni. Super fresh fish, everything was divine including some unusual presentations, the scallop sushi came with some kind of caviar on top? and white tuna belly sashimi with a ponzu sauce, scallion, shredded radish and shiso leaf. Excellent ratio of fish to rice.

The sushi chef/owner is Jason, who hails from Osaka and was most recently at Ebisu out in the avenues; he has been in the US for 3 years, sushi chef for 15 years. Jason told us how he scours the market for what's best and shops for fresh fish every single day. Expensive, but what do you expect? Move over Sushi Groove!

After completing some recipes for a client recently I was looking for something to do with leftover fake crab, and it occurred to me that the most common way to use it was in a California Roll. But I gave it a twist making a California Roll Tartine instead,...

Did you ever walk along the beach and see shiny little crabs scurrying sideways in the sand? Or maybe you saw crispy sun-bleached crab shells nestled among the driftwood, seaweed and beach glass that had washed up on the shore? Did it ever occur to you...

- Chirashi Sushi
The first of my no (or only kinda) cook(ed) dinners, Scattered Sushi. We weren't too terribly authentic with this one, skipping a bunch of mushrooms and the konbu, but it was still pretty good. Sushi rice, mixed with some age and carrot, julliened...

- Sushi Bar Video
Put a video camera onto the moving conveyor belt of a sushi bar, and you end up with a portrait of the bar from the sushi's perspective. I find it very touching in a snapshot-of-human-life kind of way. via Heather Champ...

- Visions Of Sushi Rolls
Melissa was exploring eGullet and discovered The Original Sushi Pillow! The gift possibilities are endless, at least within the set of 10 or so different sushi pillows they make....
